Inspired Recipe: Lukshen Kugel

Here’s a foolproof mac ‘n’ cheese-style lukshen kugel recipe inspired by Michael Chabon’s The Yiddish Policemen’s Union. Why?

Foolproof lukshen kugel, mac 'n' cheese style.

Ingredients

  • 2 cups dried medium egg noodles
  • 3 tablespoons butter (softened)
  • 2 large eggs
  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper

Directions

Preheat oven to 350°F.
Cook the noodles in boiling water until tender, then drain in a colander and toss with butter in a bowl.
While noodles are cooking, whisk together eggs, cottage cheese, sour cream, salt, and white pepper in a large bowl. Once cooked, stir into the noodles.
Transfer to a deep, buttered 1 quart baking dish and bake until firm, 45 minutes to 1 hour.

For a Katie Halpern twist, sprinkle on a little Huffin’ n Puffin’ hot sauce to taste—it’s the perfect balance of hot and sweet for this dish. (Also, it has an awesome name.)

This recipe creates a really comforting dish, something like mac ‘n’ cheese-style kugel—the sort of thing that is always a hit with the kids too. This isn’t something that would work for vegans (egg noodles and all that cheese, hello!), but the rest of us can certainly partake in its creamy glory. A side of peas goes great with this as well. The vegetables add a welcome pop of color and up the nutritional value of the meal as well.
