Wild Rice Stuffing

This wild rice stuffing is hearty, perfect on its own as a side dish or paired with our Stuffed Mushroom Caps recipe.

Ingredients

  • 1/2 cup wild rice (uncooked)
  • 4 cups day-old French bread (cubed)
  • 1/4 cup butter
  • 1 medium Vidalia onion (chopped)
  • 1 clove garlic (minced)
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup pecans (coarsely chopped)

Directions

Cook wild rice according to the instructions on the package; set aside.
Preheat oven to 350°F.
Spread cubed French bread in a single layer on a baking sheet. Broil for 2 minutes or until lightly toasted.
Melt butter in a large skillet over medium heat. Add onion and minced garlic; cook, stirring, for 3 minutes.
Add thyme, salt, pepper, and cooked rice; cook for 2 minutes, stirring occasionally.
Add pecans and toasted bread cubes; toss lightly.
